Ratatouille had my interest through the first 30-45 minutes and then got really bland IMO. At least it didn't have me wondering when it was going to end like Cars.

Ratatouille is the best on so many levels. It's pretty damn original, the graphics are amazing, the characters are interesting and just comical enough to not come off as totally childish and a nice message.
Wall-E is probably my favorite Pixar movie. It was damn good. It was the only movie I really think Pixar deserves a lot of it's praise for. I have to agree and say a lot of their other movies were kind of boring. The Incredibles were good, cars and ants life were horrible, and the rest were just okay.

Up did not depress me. Some scenes were sad, but the movie was uplifting overall. I like that Pixar is able to find the good in life without sugar-coating reality to such an extent that the audience gags on it.
